Fall Harvest Medley (Source: Entertain & Celebrate Autumn 2019)
(Makes 8 servings)
1 pound fresh brussels sprouts, peeled, trimmed, and halved
2 (8-ounce) packages miniature rainbow carrots, halved
1 bunch fresh radishes with green tops, trimmed and halved
2 red apples, quartered
2 green apples, quartered
3 shallots, quartered
6 cloves garlic
4 sprigs fresh rosemary
1/4 cup olive oil
1/4 cup unsalted butter, melted
1 tablespoon chopped fresh rosemary
2 teaspoons kosher salt
1 teaspoon ground black pepper
Garnish: fresh sage
- Preheat oven to 425 degrees F. Line a rimmed baking sheet with foil.
- In a large bowl, combine brussels sprouts, carrots, radishes, apples, shallots, garlic, and rosemary sprigs. Add oil and melted butter, and toss to coat. Sprinkle with chopped rosemary, salt, and pepper.
- Bake until lightly browned and tender, 25 to 30 minutes. Garnish with sage, if desired. Serve immediately.
