Fall Harvest Medley (Source: Entertain & Celebrate Autumn 2019)
(Makes 8 servings)

1 pound fresh brussels sprouts, peeled, trimmed, and halved
2 (8-ounce) packages miniature rainbow carrots, halved
1 bunch fresh radishes with green tops, trimmed and halved
2 red apples, quartered
2 green apples, quartered
3 shallots, quartered
6 cloves garlic
4 sprigs fresh rosemary
1/4 cup olive oil
1/4 cup unsalted butter, melted
1 tablespoon chopped fresh rosemary
2 teaspoons kosher salt
1 teaspoon ground black pepper
Garnish: fresh sage

  1. Preheat oven to 425 degrees F. Line a rimmed baking sheet with foil.
  2. In a large bowl, combine brussels sprouts, carrots, radishes, apples, shallots, garlic, and rosemary sprigs. Add oil and melted butter, and toss to coat. Sprinkle with chopped rosemary, salt, and pepper.
  3. Bake until lightly browned and tender, 25 to 30 minutes. Garnish with sage, if desired. Serve immediately.
