Tex Mex Quinoa Salad

Add a flavorful southwestern spin to plain old quinoa!  This yummy concoction of ingredients provides an excellent source of vitamins, fiber and protein.  It is loaded with the perfect blend of tasty veggies and savory spices that immediately turn this satisfying grain into a sensational salad.  Garnish with a sprinkle of green onions and a dollop of creamy avocado, and dive in!  Delish Y’all!

Ingredients:

1 cup uncooked quinoa(rinse and drained)
2 medium tomatoes chopped
1/2 yellow onion chopped
1 large red bell pepper chopped
1 can kidney beans rinsed
3 cloves garlic minced
1 1/4 cup vegetable or chicken broth
1/2 lemon or lime freshly squeezed
2 teaspoons olive oil
1/2 teaspoon of the following spices: black pepper, chili powder, chipotle chili pepper, cilantro powder, cumin, and basil
pinch of salt
green onion for topping optional

Directions:

Heat olive oil in medium saucepan over medium-high heat.  Add garlic, red pepper and onion to the pan and sauté until fragrant about 1 minute. Stir in the quinoa, broth, beans, diced tomatoes and salt to the pan. Bring to a boil. Reduce heat to medium-low and cover. Simmer for about 25 minutes or until the liquid is fully absorbed. Remove from heat and stir in the spices and lemon or lime juice.

Simple Guacamole:

3 small ripe avocados
1/2 lemon or lime juice
garlic powder, onion powder, salt and pepper to taste

Directions:

Scoop the flesh of avocados into a medium bowl and mash with a fork. Add lemon or lime juice and seasonings. Other optional toppings are green onions, sour cream, and cheese.
