
Ahhh… The Fall! Back to school…football… jewel colored foliage… football… crisp air, blue skies, and FOOTBALL! Spend a weekend at either one of our homes during the fall season, and you’d better be prepared to cozy up to the TV with us to cheer on our teams! The cooler early fall weather is just perfect for indoor/outdoor pre-game/tailgate parties, which allows us to enjoy fresh air entertaining. When planning this week’s pre-game menu, we’re thinking outside the grill and kicking up the heat with homemade Chicken Enchiladas with Green Chili Sauce, Spicy Mexican Rice, Mexican Grilled Corn, Fresh Salsa with Guacamole, and Jalapeno Cucumber Margaritas! Chicken Enchiladas
Ingredients: Serves 6
1 Rotisserie Chicken
1/2 block of softened cream cheese
1 – 4 oz. can of green chilies
Green Chile Sauce (Recipe here)
2 Cups of Mexican Shredded Cheese
Directions:
Debone the chicken and place into a frying pan. Put the temperature on low heat. Add the 1/2 block of cream cream and 1 can of chilies. Mix to coat the chicken. (We added a little of the Green Chile Sauce to moisten the meat mixture).
Spread the meat mixture evenly on the Tortilla and then roll.
Pour some of the Green Chile Sauce in a baking dish then place in rolled Tortillas. Pour the remainder of the Green Chile Sauce over the Tortillas and top off with Mexican Shredded Cheese.
Preparing the Green Chile Sauce
Bake at 350 degrees for 30 minutes.
Spicy Mexican Rice
Mexican Grilled Corn
Jalapeno Cucumber Margaritas
Per Serving:
2 Slices of fresh lime
3-4 slices of cucumber
2 – 3 slices of Jalapeno (More or less depending on the level of hotness you prefer.)
4 Counts of Triple Sec
8 Counts of Tequila
3 Counts of Sweet & Sour Mix
1 Count of Orange Juice
Directions:
Place limes, cucumbers, jalapeno and triple sec in a tall glass then muddle. Then add the tequila, Sweet & Sour Mix and Orange Juice. Add in ice cubes and place a shaker over the top of the glass and shake so that the liquid becomes frothy. Garnish with a slice of lime or cucumber.
