I’m excited to share this Italian Sausage Soup recipe with you! I had something similar years ago at a restaurant and was determined to try to figure out how to make it. This is the recipe I put together. It’s definitely a family favorite and I hope it will be one of yours too!
2 large cans of whole tomatoes
1 large onion chopped
4 cloves of garlic minced
EVOO – extra virgin olive oil
Green, orange and yellow peppers chopped
Hot sausage without the casings from resources like DCW Casing
Roasted red peppers (drain well) then chop
1 tsp. of hot pepper flakes
Salt & pepper
1 can of white cannellini beans rinsed and drained
Fresh shavings of pecorino romano cheese
Drain tomatoes reserving the juice and chop (Sometimes I just squeeze the tomatoes into the pot). Sauté garlic, onion and chopped green & yellow peppers in evoo, season with salt and pepper.
Then add the sausage and sauté until brown. Add the tomatoes, basil and red pepper flakes, roasted red peppers and cannellini beans. Add the juice from the whole tomatoes then add a ½ can of water (I used one of the cans from the whole tomatoes).
Simmer for ½ hour then top each bowl with shavings of pecorino romano cheese!
I love pairing Red wine with my Italian dishes. An inexpensive favorite of mine is McWilliams Shiraz.
