This hummus recipe uses edamane beans instead of garbanzo beans typically found in hummus recipes. The use of the edamane beans with the recipe created a tasty hummus that was delicious! We indulged with blue tortilla chips, spread some on pita bread, and sampled on a variety of vegetables (celery, carrots, etc.) for the health conscious. To keep this semi-healthy, we paired with a skinny style margarita, of course!
Edamane Hummus
1 cup of edamane beans (cooked and out of the skin)
2 TB lemon juice
1/4 cup of tahini
2 cloves of garlic
1/8 tsp cayenne
3 TB extra virgin olive oil
1/2 tsp salt
pepper to taste
Mix all in a blender and serve with tortilla chips and fresh vegetables.
Skinny Margarita
3 oz. tequila (Jose Cuervo Silver)
1 1/2 oz. Cointreau or Grand Marnier
1 1/2 oz. fresh lime juice
A splash of club soda
Shake well in a cocktail shaker filled with ice. Serve in a margarita glass. Garnish with a slice a lime.
