Banana Chocolate Chip Muffins

When it comes to the first meal of the day, we are both breakfast-ish kind of gals. Just a little something light to start our mornings is perfect for us. Luckily, we stumbled across the recipe we’re sharing with you today. So, so simple to prepare – you can whip up a batch in no time.  With just the right combination of sweet, yet light and healthy ingredients, we’re talking guilt-free delicious indulgence that’s substantial enough to hold off the tummy growls till lunchtime. Tip ~ prepare ahead to have on hand for those busy on-the-go mornings.

 Banana Chocolate Chip Muffins

Ingredients:

2 cups gluten-free rolled oats (we used regular oats)
1 cup Greek Yogurt
2 ripe bananas
2 eggs
1/4 cup honey
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 cup mini chocolate chips

Instructions:

Mix wet ingredients separate from dry ingredients. Blend all ingredients except for chocolate chips in food processor until batter is smooth. Add chocolate chips and sir. Transfer batter into muffin pan using parchment paper muffin liner and sprinkle more chocolate chips on top for fun. Bake at 375F for about 25-30 minutes until the tops of muffins are set and golden brown.
