Spicy Pumpkin Puree Soup
Pumpkin Crunch Dump Cake
Cooking spray, for baking dish
1 -15-oz. can pumpkin purée
1 -12-oz. can evaporated milk
1 cup of sugar
1/2 tsp. of salt
4 large eggs
1 Tablespoon of pumpkin pie spice
1 box yellow cake mix
Chopped pecans to your liking
1 cup (2 sticks) butter, thinly sliced
Whipped cream for serving
Optional 1 tsp. of vanilla *
Preheat the oven to 350 degrees F. and grease a 9 X 13 baking dish with cooking spray.
In a large bowl, whisk together the pumpkin puree, evaporated milk, sugar, eggs, and pumpkin pie spice. Pour into baking dish.
Open boxed cake mix and sprinkle evenly over top of your mixture. Melt your two sticks of butter in a microwave safe dish. Pour the melted butter over top of the ingredients and then add pecans.
Bake for approximately 1 hour or until cake is set and the edges are crisp.
Let cool and then cut into squares and top with whip cream of your choice.
Pumpkin Spice Latte
8 oz coffee or (1-2 shots of espresso)
1/2 cup milk of your choice
1/2 tsp. vanilla extract
1/2 tsp. pumpkin pie spice seasoning
1 tsp. maple syrup (or more)
2 Tablespoons pumpkin puree
Sprinkle of cinnamon
Combine the milk and pumpkin puree then microwave for about 45 seconds. Add vanilla extract, maple syrup, and pumpkin pie spice seasoning and stir. Froth using a hand held milk frother until foamy.
Pour the coffee or espresso into a large mug and add the foamed milk. Top with whipped cream and a sprinkle of cinnamon.
