What’s For Dinner? Easy Weeknight Meal!

Are you tired of cooking the same old thing for dinner?  Our new series, “What’s For Dinner?!” will provide you with delicious dinner suggestions on what to cook for your family. We’ve got a fresh and colorful Fall Pecan Salad and a Simple Spaghetti Squash Skillet that will surely hit the spot! YUM!

Weeknight

Fall Pecan Salad
makes 8 servings

1 head romaine lettuce, torn
2 heads endive, torn
4 cups fresh baby arugula
2 red pears thinly sliced
1/2 cup pencan halves toasted
Honey-Dijon Dressing (recipe follows)

In a large serving bowl or on a platter, gently toss together romaine, endive, arugla, pears, and pecans. Serve with Honey-Dijon Dressing.

Honey-Dijon Dressing
Makes 3/4 cup

1 medium shallot, finely chopped
3 tablespoons honey
2 tablespoons white balsamic vinegar
1 tablespoon Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/3 cup olive oil

In a medium bowl, whisk together shallot, honey, vinegar, mustard, salt, and pepper. Slowly whisk in oil. Toss and use immediately.
