6 cups flour

3 eggs

1 stick margarine

1 Tablespoon salt

3 teaspoons baking powder

1 ½ cups water

Melt 1 stick of margarine in 1 cup of boiling water.  Mix 3 eggs into ½ cup of cold water. This is so the eggs will not cook in the water.  Whisk the salt, baking powder and flour together in a large bowl.  Make a well and add liquid ingredients.  Mix and knead dough until elastic. Add additional flour if needed.  Divide dough into 3 parts.  Cover unused dough with plastic wrap.  Roll out one section at a time to approximately the thickness of a pencil.  Cut into 1 inch strips.  Sprinkle with a little flour to avoid sticking in the cavatelli machine.  Place them on a cloth to dry out slightly to avoid sticking.  This will help if you’re freezing them for future use.

Recipe makes 3 pounds.

It’s not about finding the time; it’s about making the time. Yesterday we had four generations surrounding the kitchen table. We all took part in some quality family time, trying to instill the old, traditional Italian family recipe for the next generation to carry on. Lauren’s family has been making homemade cavatelli for over 75 years. With flour and dough on the floor, and the youngest playing with a handful of it, we went to work and spent the afternoon rolling out nine pounds of pasta for our upcoming holiday feast and they don’t need to worry since they can clean with the best alternative to Roomba that is perfect for cleaning the floors. When asked by the little one’s why we were taking so much time to do this, we explained that we were taught some of best tasting foods are made from scratch.  We hope you enjoy sharing our Christmas tradition with your family as much as we do with ours!
