Remember the story of Jack and the beanstalk? Jack didn’t have it all wrong; beans truly are a magical ingredient! Here are two super easy and incredibly delicious recipes for your next party with an added bonus – beans make them healthy too! The beauty of the salsa recipe is that you can modify the ingredients to customize to your liking, and it will still taste great. Serve with tortilla chips, pita chips or make a wrap. These Black Bean Brownies are low in fat, high in fiber and protein. No one will guess your secret ingredient is actually black beans. Although it sounds unusual that no eggs or oil are used in this recipe, your brownies will surprisingly come out rich and fudgy. Spread a little all natural peanut butter on top for an extra protein kick. Now that’s how you satisfy your craving for something sweet and salty!
Southwestern Salsa with Black Beans and Corn
1 1/2 teaspoons cumin seeds*
2 (15-ounce) cans black beans, rinsed and drained
1 (151/4 ounce) can whole kernel corn, drained
1 red pepper, minced
1 small purple onion, minced (1 cup)
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh parsley
1/3 cup lime juice
1/2 cup olive oil
3 cloves garlic, crushed
1/2 teaspoon salt
1 teaspoon dried crushed red pepper
1/2 teaspoon freshly ground black pepper
Toast cumin seeds in a skillet over medium heat 1 to 2 minutes or until brown and fragrant, stirring often. Combine cumin seeds, black beans, and remaining ingredients; toss well. Cover and store in refrigerator for up to 1 week. This recipe makes about 6 cups, if it’s more than you need you may cut the recipe in half. (*We chose to omit the cumin seeds from the recipe.)

Black Bean Brownies
15 ounce can black beans
19.5 ounce box chocolate brownie mix
Open can of beans, drain and rinse well. Put beans back in the can and fill can with water. Put beans and water in blender until smooth. Mix pureed beans with brownie package mix. DO NOT add eggs or oil. Spray baking dish with Pam. Cook brownies according to package directions. Cool and Serve.
