Watching The Academy Awards  is always a fun and exciting event in our homes!  Easy Elegance is our theme this year.

To get us red carpet ready, we will be serving  Red Velvet Cupcakes, Red Velvet Cheesecake Brownies, and Red Velvet Cookies from our local bakery.  A sprinkle of parmesan cheese will add extra flavor to our buttery popcorn.  To wet our palette, we are serving Berry Champagne Slushies and Johnnie Walker Blue Label Scotch over whiskey stones.  With these printable 2014 Academy Awards ballots in hand, we can all cast our own votes on who we think should take home Oscar!

Berry Champagne Slushies – Makes 2 Servings:

1 cup of frozen mixed berries

1 cup of champagne

Blend until smooth.

Like many of us, we don’t always have the time or means to get to the spa for a facial.  We searched for homemade face mask recipes on Pinterest and found these two that we had to try.  Pamper yourself at home with ingredients right from your refrigerator or pantry.  A natural and healthy way to glowing skin!

Avocado Face Mask (For Oily Skin)

Deeply cleanses and
nourishes the skin, refines enlarged pores

2 Tbsp. mashed avocado

1 Tbsp. honey

1 Tbsp. yogurt

2 Tbsp. mashed cucumber

Mash the avocado pulp and the cucumber in a food processor.  Add the honey and the yogurt and mix all the ingredients together until smooth.  Apply to face and neck, avoiding the eye area, and leave it on for 15 minutes.  Rinse with lukewarm water.   To make the mask cool and refreshing prior to use, I covered and refrigerated for about half hour.  You may use this avocado mask once a week.

Anne Hathaway’s Gorgeous Skin Face Mask

Tightens skin. provides natural exfoliation and helps to heal the skin.

1/2 banana

2 Tablespoons of honey

1 Tablespoon of water

Mash banana, then add honey and water. Mix well.

Apply to face and let sit for 20 min.  I find that it works best to lie down. The mask will slide off if not.

Wash your face then apply your moisturizer.

 Skinny Chicken Enchiladas

8 Whole Grain 100-Calorie Tortillas

1 can Rotel Diced tomatoes

16 ounces Fat Free Sour Cream

4 ounce can Green Chilies

1 lb. Boneless Skinless Chicken Breast

1 can Fat Free. Low Sodium Cream of Chicken Soup

1/4 cup Diced, Fresh Cilantro

1 1/2 cups 2 % Milk Shredded Cheese

Cook chicken (in crock pot, boil or bake).  When cooled, shred the chicken.  We used chicken breast from a rotisserie chicken. A time saver and tastes delicious!  In a skillet, combine the shredded chicken with the rotel tomatoes and green chilies.  Let flavors cook together and warm.  In a separate saucepan, combine the fat free sour cream and the cream of chicken soup.  Cook until warmed and stir in cilantro.  Simmer for 5-10 minutes.  In a flour tortilla, arrange some of the chicken mixture with 1 Tbsp. cheese.  Roll and arrange in a 9 X 13 baking dish fold side down.  Arrange all 8 tortillas.  Pour sour cream sauce over top and sprinkle with remaining shredded cheese.  Bake at 350 degrees for 20-25 minutes until cheese is warm and bubbly.  Serve with salsa and lettuce on top!
